Spinach & Feta 'Quiche'

If you are looking for some low-calorie, low-carb summer recipe ideas then this fantastic crustless quiche is perfect. 

2 large eggs
2 slices of parma ham
4 cherry tomatoes halved
20g spinach
30g feta
Black pepper
Fry light spray

  • Preheat oven to 180c
  • spray small baking tin with fry light
  • line the tin with ham
  • spray the frying pan with fry light and soften the tomatoes and wilt the spinach
  • tip veg into the baking tin
  • crumble feta into beaten eggs and touch of black pepper
  • tip cheesy egg mix on top and scatter any remaining feta
  • bake for 15mins or until firm in the middle
  • rest for a few minutes before serving
